Squash Casserole Recipe




ingredients:

1 C. chopped onion
1 C. shredded sharp cheddar cheese (I used a little more)
1 lb. squash (cooked, drained and mashed)
1 sleeve ritz crackers, crushed
1/2 tsp. each salt and pepper
1/4 tsp. garlic powder
1/2 C. sour cream
1/4 tsp. paprika
1 egg beaten
6 T. butter

Directions:

Sauté onions in 2 T. butter till tender. Combine squash, onions, sour cream, egg, cheese and seasonings in a large bowl. Add in 1/2 cup crushed crackers. Place in a 350 degree oven for 30 minutes. Combine 4 T. melted butter with remaining crackers. Remove casserole and top with buttered crackers. Return to oven for an additional 15 minutes.
