ingredients:
For the chicken:
1/2 tsp. each salt and pepper
4 boneless chicken cutlets
1 tsp. Italian seasoning
1 tsp. garlic powder
2 T. Olive oil
2 C. flour
Directions:
Combine flour and seasonings. In a skillet, heat oil and then dredge chicken into flour mixture and fry 2-3 minutes on each side till golden brown. Remove to a cookie sheet and place in a 350 degree oven for an additional 20 minutes or until chicken is cooked through.
For the Gravy:
1/4 C. each chopped red and orange peppers
1/2 tsp. each salt and pepper
approx. 2 C. chicken broth
2 C. fresh baby spinach
1/4 C. chopped onion
approx. 1/4 C. flour
1/4 C. heavy cream
1 T. Olive oil
4 T. butter
Saute veggies in oil and butter 2-3 minutes, toss in flour and combine well. Gradually add in chicken broth and stir constantly as it begins to thicken, toss in the spinach and the heavy cream and continue to stir. Add more chicken broth if it gets too thick.
