Potato and Zucchini Cheese Patties Recipe




ingredients:

1/4 C. freshly shredded Asiago cheese (you can use parmesan if you do not have Asiago.)
1/4 C. shredded sharp cheddar cheese
1 1/2 - 2 C. left over mashed potatoes
pinch of salt and pepper
1/3 C. all purpose flour
1 C. grated zucchini
1/4 C. diced onion
1 egg, beaten

Directions:

Combine all ingredients and mix well. Heat oil in a skillet over med. high heat. Drop by spoonfuls into oil and fry for 1-2 minutes per side or until golden brown and crispy. Remove to a paper towel lined plate and continue to cook remaining. Makes approx. 10 patties
