Ingredients:
1 T. dill pickle or sweet pickle relish
1 green onion, finely chopped
good pinch of sweet paprika
1/4 tsp. mustard powder
salt and pepper to taste
2 T. diced celery
1/8 tsp. dill weed
3 large eggs
2 T. mayo
Directions:
Place the eggs in a pot and cover with water. Bring them to a boil, cover with a lid and turn off the heat. Let them sit for 20 minutes, drain the water and add cold water to the pot. Allow to sit for 5 minutes and then peel them. Place the peeled eggs in a bowl and mash them with a fork till they are good and broken up. Add in the remaining ingredients and stir to mix well. Serve on your favorite sandwich bread with lettuce.
