ingredients:
1/4 cup finely shredded cheddar cheese
4 slices bacon, finely chopped
1 medium zucchini, shredded
1 large carrot, shredded
1 cup parmesan cheese
salt and pepper to taste
1 small onion chopped
1/2 cup self rising flour
1/4 cup heavy cream
3 eggs
Directions:
Brown bacon and sauté onions all in the same pan, add in carrots and zucchini until tender. In a bowl combine eggs, cream, and cheeses. Let bacon mixture cool about 10 minutes and add to egg mixture. Stir in flour, salt and pepper. Scoop into muffin tins and bake in a 350 degree preheated oven for 25 minutes.
