ingredients:
1 C. shredded italian blend (or mozzarella) cheese
1 lb. mild italian sausage, sliced
3/4 C. heavy whipping cream
6 oz. bowtie (faralle) pasta
1/4 C. parmesan cheese
5 oz. fresh baby spinach
1 small onion, chopped
2 cloves garlic, minced
1 tsp. italian seasoning
1 T. olive oil
3 T. butter
Directions:
Cook the pasta according to pkg. directions, drain and set aside. Meanwhile, in a large skillet, heat the oil over med. high heat and add in the sliced sausage. Cook till it begins to brown and add in the onion and garlic. Reduce the heat to medium and cook for 3-4 minutes. Drain off any excess grease and then add the 3 T. butter, the cream,parmesan cheese and italian seasoning, stirring to combine. The sauce will thicken up after a few minutes. Stir in the spinach and cook until wilted. Stir in the drained pasta and combine well. Remove from the heat and sprinkle the cheese over the top. Cover and allow the cheese to melt before serving.
