ingredients:
3 large potatoes, washed (leave the skin on)
5 strips bacon, cut up and fried crispy
1 C. colby jack cheese, finely grated
1 small onion, diced
pinch of paprika
1/4 tsp. pepper
1/2 tsp. salt
4 T butter
2 C. milk
4 T flour
Directions:
In a medium sauce pot saute onions in butter till tender, add flour and cook for 1 minutes. Add in 2 cups milk and allow to start thickening. Once it begins add a little more milk if needed to thin it out just a bit. Add in 3/4 cheese and seasonings remove from heat. Slice potatoes very thin and place a good layer in the bottom of a greased 9 x 9 casserole dish, sprinkle with 1/2 the fried bacon and top with some of the sauce, repeat with another layer and end with with a top layer of potatoes and remaining sauce. Place in a 350 degree oven and bake for 50 minutes, if you notice the sauce browning too fast, cover with foil. After 50 minutes, remove and
top with remaining 1/4 cup cheese. Return to the oven to melt. Approx. 5-6 servings
