ingredients:
1 English Muffin, split and lightly toasted
4 Slices Canadian Bacon
1 T White Vinegar
2 C Water
2 Eggs
Hollandaise Sauce
Make Hollandaise Sauce:
1/4 teaspoon dijon mustard
1 teaspoon fresh lemon juice
1/2 cup butter, melted
3 egg yolks
Directions:
In a blender, combine egg yolks, mustard, and lemon juice. Blend to fully combine (about 5 seconds). With the blender on high speed, stream the melted butter in. Sauce should be a thick, but smooth consistency. You can then place in a saucepan and heat on a very low setting to warm through.
In a sauce pan, add water and vinegar and bring to a boil. Reduce heat to medium and in 2 small bowls crack eggs. Slowly pour each egg into the water and let cook for 5 minutes. Heat canadian bacon and place on top of english muffin. Top with poached egg and then pour the hollandaise sauce over the top.
NOTE: You can use a packaged hollandaise sauce mix if you like, I do when I am in a hurry, but the homemade sauce is easy and delicious.
