QUICK RICE PUDDING



Ingredients

1 1/2 cups pre cooked rice
1 cup milk
1/2 cup half and half
1/2 cup sugar ( i use a little less)
1 teaspoon vanilla
1 egg scrambled
**optional add 1/2 cup raisins

Directions

In a medium sized pan I added the rice, milk and half and half and slowly heated it up. After maybe 6 minutes when it was hot I added the sugar and quickly whisked in the egg to make sure it blended and not turned to scrambled egg. After ten minutes of heating it should be smooth and bubbly. Take off the heat and add the vanilla and then cool.

If you add raisins add them when you put in the rice and milk at the beginning.

Serve with a sprinkle of cinnamon and some whipped cream.!:
