EGGPLANT PANINI



Ingredients

1 eggplant sliced-lengthwise
2 zucchini sliced-lengthwise
1 onion sliced
2 peppers quartered
feta or goat cheese or your favorite
French or Italian baguette
fresh oregano
olive oil
salt and pepper to taste

Directions  

Lightly oil the vegetables and sprinkle them with oregano, salt and pepper. Put in a baking pan and roast at 450 for 10-12 minutes until tender.

Slice baguettes, sprinkle your cheese on the bread then fill with vegetables and press or grill.
