Ingredients
Half a medium onion-minced
1/4 cup flour
1/4 cup butter
2 cups Half and Half
2 cups chicken stock
1 pkg frozen or fresh broccoli
1/2 cup shredded carrots-optional
8 oz sharp cheddar cheese shredded
Directions
Saute onions in some of the butter until tender. Add the 1/4 cup flour and rest of butter and make a roux stirring until well mixed. Add the two cups stock and then half and half and let simmer for 20 minutes. Add broccoli, carrots and cheese and let simmer for t lest half and hour. Serve and sprinkle extra cheddar on top-
