Ingredients
16 small shrimp, peeled & deveined (I buy the $5.00 bag of them at Walmart)
2 strips of bacon, cooked and crumbled (reserve the bacon grease)
1/2 C. shredded sharp cheddar cheese
4 T. butter (not margarine)
creole seasoning
1 C. whole milk
6 T. quick grits
1 C. water
1/4 tsp. salt
Directions:
In a med. pot add the water, milk and butter. Bring to a low boil over med. high heat, reduce the heat to medium low and whisk in the grits and the salt. Continue whisking until the grits thicken up, about 5-7 minutes. Remove from the heat and stir in the cheese. Set aside
In the skillet the bacon was cooked in, heat the bacon grease over med. high heat. Season the shrimp with a good dusting of the creole seasoning and add the shrimp to the pan. Saute the shrimp for 3 minutes. Remove from the heat. Divide the grits into bowls and top each bowl with half the shrimp and then half of the crumbled bacon. Serve hot.
