ingredients:
freshly grated parmesan cheese (for serving, if you don't have fresh in the fridge, the grated kind works also)
1 T. my house seasoning (equal parts garlic powder, onion powder and black pepper, combine and store in an airtight container)
1 tsp. smoked paprika (use can use regular paprika too)
dried or fresh chives for serving
3 large russet potatoes
big bowl of ice water
2 T. olive oil
Directions:
Line a large baking pan with tinfoil and lightly spray with cooking spray. Wash the potatoes and cut the in half then in half again to make the wedges, make sure they are all the same size. Place the potatoes in the bowl of ice water and let them soak for 10 minutes. Remove the potatoes to a dish towel and dry them well. Place the house seasoning and paprika in a ziploc bag. Add in the potatoes and toss to coat well. Add in the olive oil and give them a good toss again. Pour the potatoes out onto the baking sheet and spread around. Bake them in a 450 degree oven for 25-30 minutes, turning them about half way through. Once done, place them on a serving plate and top with some parmesan cheese and a good sprinkling of chives.
