ingredients:
Topping: 1/4 C. shredded cheese, 1/2 C. bread crumbs or panko, 1/2 T. olive oil
2 C. fresh broccoli florets (chopped)
1 1/2 C. shredded cheddar cheese
pinch of salt and pepper
2 C. cooked white rice
1 T. melted butter
1 T. mayo
2 eggs
Directions:
Cook broccoli in boiling water for 5 minutes. Drain and set aside. Combine rice, beaten eggs, 1 1/2 C. cheese, mayo, salt and pepper. Add in the broccoli and the melted butter, stir well to combine. Mix together the topping. Grease a muffin tin very well with cooking spray. Spoon mixture into each muffin cup filling almost full. Sprinkle the topping over each cup and gently press down. Place in a 350 degree oven for 20-25 minutes. Let sit 5 minutes then run a knife around the edges and gently remove.
