Blueberry Muffin and Cream Cheese Delight




ingredients:

8 oz. cream cheese, room temp.
1 tsp. vanilla extract
1/2 C. sugar
1 large egg

Using a mixer, combine the cream cheese and sugar, add in the vanilla and egg and beat until smooth, set aside.

1 C. blueberries, plus a few more for the top
1/4 C. vegetable oil
2 C. self rising flour
1 tsp. cinnamon
3/4 C. sugar
1 large egg
1 C. milk


Directions:

In a large bowl combine the flour, cinnamon and sugar. Whisk together the egg and milk and stir into the dry ingredients. Stir in the oil and combine well. Gently fold in the blueberries. Spread this in the bottom of a 9x9 pan sprayed with butter cooking spray. Top this with the cream cheese mixture. Place a few more blueberries on top. Place in a 400 degree oven for 30 minutes. Remove and allow to cool for 15 minutes before slicing.
