ingredients:
1/2 lb. kale, removed from the stem, washed and torn
15.5 oz. cannellini beans, rinsed and drained
1 med. red potato, quartered and sliced thin
1/2 lb. smoked sausage, chopped
good pinch of red pepper flakes
3 strips of bacon, chopped
1 clove garlic, minced
1/4 tsp. black pepper
4 C. chicken broth
1 onion, chopped
1 T. butter
3 T. milk
Directions:
In a dutch oven, cook the chopped bacon over med. high heat till it begins to get crisp, add in the smoked sausage and cook for 2-3 minutes to brown a little. Add the butter, onion and garlic. Cook for 5 minutes, stirring occasionally. Add in the kale and let it wilt in the pan for about 5-6 minutes. Add the chicken broth, potato, beans, pepper flakes and pepper. Stir to combine, reduce the heat to medium, cover and cook for 30 minutes. Stir in the milk just before serving. Serve with crusty bread.
