1/2 tsp. each salt and pepper
2 chicken breast
3 chicken thighs
2 cloves garlic
1 stalk celery
4 cups water
1/2 cup milk
4 T. butter
1/2 onion
Boil chicken, onion, garlic and celery in water till cooked through. Remove chicken and vegetables from broth. Let chicken cool and debone, if using bone in, and shred chicken. Set aside and make dumplings,
I used to make dumplings from scratch, but I find that bisquick works wonderfully.
3 c. bisquick
whole milk
Pour enough milk into the bisquick to form a soft dough (not a wet dough).
Bring broth back up to a soft boil and add in butter, 1/2 c. milk, salt and pepper. Drop by spoonfuls the dough into the broth and reduce heat to medium low and let cook for 10 minutes. Remove from heat and gently fold in chicken. Allow to sit for 5 minutes before serving.
